Erin, you might check with Neal Brown re: your packaging question. I know he's done quite a bit of research in that area when they were looking at the baby food project.

crud, couldn't figure out how to make wednesdays work. we usually run out of about 75% of our stuff by Saturday, and we do our production mainly on thursdays so that everything is fresh for the weekend. I love working with Joe! His shop is great!
